1 cup cubed eggplant (peeled)1 cup cubed zucchini1 pound extra firm tofu, cubed (reserve water)1/2 cup Breadcrumbs1/4 cup Wholewheat flour1/2 teaspoon Salt1/4 teaspoon Cayenne1 teaspoon Basil1 teaspoon Oregano1/2 teaspoon Thyme1/2 teaspoon Garlic powder1 teaspoon favorite Mustard1 cup chopped onions1 Tbsp. vegetable oil4 cups spicy brown sauce (recipe above)6 Italian bread rolls or mini-baguettes [link widoczny dla zalogowanych], split1/2 cup shredded Mozzarella Cheese
Heat 1/4 cup olive oil in sauté pan over medium heat until hot. Add onion and 2 teaspoons of the garlic. Cook until onion is tender and glassy. Add tomatoes and their liquid, 2 teaspoons basil, 1 teaspoon oregano, 2 bay leaves, 1 teaspoon tarragon, 1/2 teaspoon black pepper, dry red wine and red pepper; cover. Simmer 1 hour, stirring occasionally.Once sauce has simmered for an hour, add dry sherry and let simmer 20 minutes more. Then, remove bay leaves.Combine meat, scallions, bread crumbs, egg white [link widoczny dla zalogowanych], 2 tablespoons water, remaining spices and mustard in medium bowl until well blended. Shape into small meatballs. Makes one dozen.Heat final 1/4 cup of olive oil over medium heat until hot. Add in meatballs. Fry 5 to 7 minutes, stirring occasionally.Split ciabatta or mini-French loaves. Brush lightly with olive oil and grill the inside surfaces very quickly on extremely high heat to help them stand up to the meatballs and sauce. Place 3 or 4 meatballs on bottom half of the bread; spread warmed spicy sauce over the meatballs; cover with top bread half and serve. Makes 4 to 6 portions.Vegetarian Meatballs
Heat 1/2 portion of olive oil over medium-high heat and put in onions. Add garlic and cook until onions are glassy. Then add vegetables and cook until tender. Add 1/4 portion of the brown sauce; mix lightly. Add 1/2 portion of each spice. Cook until heated through, stirring occasionally. Turn off heat and set aside vegetable mixture to cool to room temperature.Once mixture is room temperature [link widoczny dla zalogowanych], mix in cubes of firm tofu, breadcrumbs, whole wheat flour and remaining spices. Cook vegetarian meatballs 5 minutes each. Stir occasionally and roll meatballs in the skillet to get even browning. Drain on paper towels.Spoon 4 meatballs onto each roll. Top sandwiches evenly with warmed brown sauce then, sprinkle with cheese. Place on rack of broiler pan. Broil until cheese is melted. Serve - makes enough for 4 to 6 portions.

These recipes reflect a spicy, brown sauce rather than the tomato sauce that many Americans have come to expect of Italian dishes. This brown sauce includes chopped tomato and is a representation of those sauces typically found in the Piedmont region of Italy.
