4 medium ripe but firm pears, such as Bosc or other variety suitable for baking2 medium apples Jordan Flight 45, such as Gala or other variety suitable for pastries1/3 cup dark rum (preferably Myers)½ fresh lemon~3/4 cup sugar2 tablespoons minute tapioca
Peel and core the apples and pears and thinly slice into a large bowl. Toss with the sugar, rum, and tapioca. (The amount of sugar can be adjusted depending on how tart or sweet the fruits are.) Let sit a minimum of 30 minutes to give the tapioca a chance to soften, and the fruits release their juices.Preheat the oven to 350 degrees.Cut the butter into thin slices and cream with the sugar in a medium-size bowl until light and fluffy. Stir in the flour, nuts cheap jordan 2011, cinnamon, and salt.
